Wild-caught along the East Coast of New Zealand, butterfish is best pan-fried carefully or baked at low heat. Minimal handling preserves its fragile flesh.
Lean and protein-rich, butterfish suits light, refined meals. Serve simply with lemon, herbs, and Sauvignon Blanc.
