Moki has a distinctive, earthy flavour and firm texture, offering something a little different from traditional white fish. A cheaper fish that feels rich in every sense.
Wild-caught in Hawkes Bay and along the East Coast, Moki is a truely versatile fish, it benefits from slow cooking methods such as braising, smoking, or gentle roasting to develop its depth of flavour. It's fantastic pan-fried, roasted, crumbed, battered and makes a stunning rawfish.
High in protein and minerals, Moki is well suited to hearty dishes. Pair with garlic, rosemary and a light Pinot Noir.
